No Sugar Challenge: Courgette & Sweet Potato Slice

Courgette & Sweet Potato Slice, taken from Viridian’s No Sugar Challenge – ask in store for details! 

Serves 4

Ingredients

  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 teaspoon dried rosemary
  • 450g courgette, grated
  • 250g sweet potato, grated
  • 150g ground almonds
  • Salt & pepper
  • 5 eggs
  • 1/4 cup of nutritional yeast (we sell it!)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chilli flakes
  • 3 tomatoes, slices

Method 

  1. Pre-heat the oven to 200°C and line a baking dish with parchment paper.
  2. Mix all ingredients except the eggs and tomatoes in a large bowl.
  3. Make a well in the mixture and add the eggs, mix well.
  4. Spread the mixture over the baking dish evenly and top with the sliced tomatoes.
  5. Bake for 1 hour until a skewer comes out clean.
