Courgette & Sweet Potato Slice, taken from Viridian’s No Sugar Challenge – ask in store for details!
Serves 4
Ingredients
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 1 teaspoon dried rosemary
- 450g courgette, grated
- 250g sweet potato, grated
- 150g ground almonds
- Salt & pepper
- 5 eggs
- 1/4 cup of nutritional yeast (we sell it!)
- 1/2 teaspoon paprika
- 1/2 teaspoon chilli flakes
- 3 tomatoes, slices
Method
- Pre-heat the oven to 200°C and line a baking dish with parchment paper.
- Mix all ingredients except the eggs and tomatoes in a large bowl.
- Make a well in the mixture and add the eggs, mix well.
- Spread the mixture over the baking dish evenly and top with the sliced tomatoes.
- Bake for 1 hour until a skewer comes out clean.
